Whole Wheat Oat Chocolate Chip Fiber Cookies



Lately I've been feeling like all food hates me and I've been trying to be more mindful about what I eat, which isn't always fun if you like cooking and food in general. But I've been doing my best to avoid some of the things that I think have been irritating my body more than others and I *think* its been helping.





Through paying more attention to what I'm eating, I've noticed that I really don't get as much fiber as I should, or rather, as I need. So I've started tracking how much fiber I get on a daily basis in an effort to increase my daily intake. It's honestly been eye opening to actually realize how low my daily intake was. I've made some simple changes that have actually been pretty easy to maintain so far!






Despite my need to be a bit more discerning with what I'm eating, I still like to cook and bake and this weekend I really felt like making some cookies. I decided to try making something a little different from my typical cookie recipe and made these fiber filled oatmeal chocolate chip cookies. They're made with whole wheat flour and oats - two very high fiber foods. Each one of these cookies has about 1 gram of fiber - so eat a few - it's all good. :)

Since I'm also trying to avoid/limit my dairy intake (I think it's causing me more trouble than benefit...), I used my favorite chocolate chips which are the dairy free mini chips from Enjoy Life. These little babies are just so good and I love how when you use smaller chips, you get more chip per bite. ;)




These cookies come together super easily - this is a one bowl friendly recipe!! I didn't have the energy to bust out the mixer and did everything by hand. Just don't mix too hard. I ended up breaking a spatula... oops.


I love how these are lumpy little cookies - it reminds me of cookies my grandmother used to make that to this day, I haven't been able to replicate. Personally, I really like the texture of these. There's enough cinnamon that it's present in every bite (though I'd consider adding more), and the whole wheat compliments the oats well.





Fiber filled Oatmeal Chocolate Chip Cookies 

Makes about 30 cookies

You will need: 

1 1/2 sticks of salted butter (if you use unsalted, add a 1/2 teaspoon of salt to your mix)
2 eggs
1 teaspoon vanilla
1 teaspoon cinnamon
2 cups whole wheat flour
1 cup quick cooking oats (or whatever you have on hand)
1/2 cup white granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking soda
1 1/2 cup Enjoy Life mini chocolate chips

To make: 

-Start by preheating your oven to 375° and lining your baking sheet with parchment paper.

-In a large mixing bowl, combine baking soda, cinnamon, oats and flour.

-Add in sugars and combine well.

-Whisk your eggs and combine with vanilla, then add to dry ingredients along with your butter.

-Stir everything until combined well, and then add in your chocolate chips.

-Form your dough into balls and bake for about 10-12 minutes. They may seem too soft when you take them out, but they will harden as they cool! Allow cookies to cool on cooling racks - and be careful with the hot chocolate - I burnt the crap outta my finger making these. The things we do for love. ;)
